2tbspchopped garlic cloves

Instructions
Heat the olive oil in a large skillet or pot over medium-high heat. Add the diced onion and cook for about 3–4 minutes until it begins to soften.
Stir in the minced garlic and grated ginger. Cook for another 1 minute until highly fragrant, being careful not to let the garlic burn.
Push the onions to the side of the pan and add the beef mince. Break it apart with a wooden spoon and cook until fully browned and no pink remains (about 5–7 minutes). Drain any excess liquid if necessary.
Stir in the cumin, paprika, a good pinch of salt, and a few grinds of black pepper. Mix thoroughly so the beef is coated in the spices.
Bring the mixture to a gentle boil, then reduce the heat to low. Cover and let it simmer for at least 10 minutes to allow the flavors to meld together and the sauce to thicken. (If you are adding frozen or canned veggies, stir them in during the last 5 minutes of simmering).
